Yea it is finally March! We are hoping it warms up soon so we can change our menu up a bit and start doing some grilling outside. I try to find a couple of new recipes a month, however every family has its own standard recipes they seem to use when in a pinch that the kids love.

Freezer Cooking Days!

So I am joining Money Saving Mom and Life as Mom on their freezer cooking days again for March.  I am not as adventurous as others but I do get a few things ready for easy to go to meals for the month.  My plan is to do my freezer cooking this Saturday, Feb 27th and Sunday, Feb 28th!

What’s Your Best Price – Tomato Sauce

These little 8-oz cans of tomato sauce are definitely a pantry staple for me. My favorite thing to use them for is when I use a jar of spaghetti sauce; I add one can to a jar a sauce to get a little more sauce for my money. So I have been price shopping this item and I find that it is cheapest at Aldi’s for $0.25 per can. What is your cheapest price on 8-oz cans of tomato sauce right now?

Shredded Chicken Tacos Crockpot Recipe

Ingredients:

2-3 Boneless skinless chicken breasts
1 jar of salsa
Flour tortillas
Sour cream
Cheese
Lettuce
Tomatoes

Directions:


Pour some of the salsa on the bottom of the Crockpot. Lay chicken breasts on top of salsa and then cover with remaining salsa. Let cook on low for 6-8 hours. Using two forks shred the chicken. Mix well and then place in tortillas and top with your favorite toppings!

Gardening Perks

So here is Ohio, the gardening season is 4-5 months during the summer. I grow lots of tomatoes and I like to chop them and freeze them for use all winter long. I made chili on Monday and look what I still have in my freezer? It is some tomatoes with a little bit of green peppers on top, perfect for a Crockpot full of chili. I just throw the frozen bunch in the Crockpot and let it cook. I have not bought canned tomatoes in a few years now. I seem to chop enough up to have enough to last until next year’s garden and the best thing is I know that we grew them!

CVS: Huggies Wipes Refills @ $2.50 each!!!

So I got this HOT tip from Amanda at A Few Shortcuts that the 216 count Huggies refill packs were ringing up for $2.50 at CVS and of course I had to check it out.  It is confirmed, I got 5 refills for $2.50 each.  Even better I had 2 - $0.50 off coupons and $10 in ECB's,  Should I feel guilty for paying a little over $2 for 5 packs?  Nah - but I do I feel bad for those moms who do not read blogs and would have paid $7.99 each!

Beef Stroganoff

This is the exact recipe that my mom has always made and I absolutely love it. My husband will only eat this Beef Stroganoff, no imitations! This is super easy and does not use that many ingredients, most of which should be in your pantry!


Ingredients:
3 tbsp butter
1 lb of top round steak cut into thin strips½ cup chopped onion
4 tbsp flour
1 can of tomato soup
1 can of beef broth
1 tsp Worcestershire sauce
1 can of sliced mushroom (optional)
½ tsp salt
¼ tsp pepper
¼ tsp paprika
1 cup sour cream
1 bag of egg noodles

Directions:
In large pan, melt butter and cook meat until no more pink appears. Add onion and sauté a few more minutes. Add flour and mix completely. Add soup and broth and stir continuously until it begins to boil. Reduce heat and add Worcestershire salt, mushrooms (optional), salt, and pepper. Let simmer for 1 – 1 ½ hours stirring occasionally until meat is tender. Add paprika and sour cream and cook an additional 15 minutes. Serve over cooked egg noodles. Yum!!

Grocery Store Economics 101



Giant Eagle had Hungry Jack pancake mix on sale this week. They were offering 2 sizes with this sale:

32 ounce Box @ 2 for $5 ($2.50 each)
7 ounce Pouch @ 10 for $10 ($1 each)

I also had 2 - $1.00 off 2 coupons from 2-21 Red Plum that did not have any size restrictions on it. So do you think it would be better to buy 2 small pouches and use the $1 off coupon making them $0.50 each or buy 2 boxes and use the $1 off coupon making it $2 a box? I immediately thought that I would save more money on the pouches, and then I did the math:

2 pouches - $2 minus the $1 coupon = $1 for 14 total ounces or $0.0714 per ounce
2 boxes - $5 minus the $1 coupon = $4 for 64 ounces or $0.0625 per ounce

So I bought the boxes!

Dijon Crusted Tilapia

So lent started today and that means more FISH!!  I love that one!  Tonight I made a Dijon Crusted Tilapia, delicious!

Ingredients
4 tilapia filets
3/4 cup Panko bread crumbs
1 tbsp olive oil
1 tsp Parsley flakes
1/4 cup dijon mustard
1 tsp olive oil
1/2 tsp salt
1/4 tsp pepper
1 clove of garlic, minced.

Directions:
Preheat over to 425.  Spray pan with cooking spray and lay tilapia filets on pan.  Mix panko and olive oil and microwave for 30 seconds to brown.  Once cooled, add parsley.  Wisk together remaining ingredients.  Spread dijon mixture on fish and then top with bread crumb mixture.  Bake for 15-20 minutes!  Enjoy!

Pepperoni Pizza Wheels

Here is a quick and easy recipe when you are in a pinch!

Ingredients:
1 can of refrigerated pizza crust
1 can of pizza sauce
pepperoni slices
cheddar cheese

Directions:
Pre-heat oven to 350.  Roll out pizza crust, top with sauce and pepperonis.  Roll up and then cut into equal sections.  Place on a cookie sheet sprayed with cooking spray and then top with extra cheddar.  Bake for 20 minutes at 350.  Warm up remaining pizza sauce for dipping.  Enjoy!

Menu Plan Monday – Week of 2/15/10

I meant to start this in February, better late than never. I am attempting to plan our meals for the week to keep us more on track. My husband and I both work full-time so planning is a must or else we will end up with takeout. Our goals for this year include only eating out for dinner two times a week. At least one time a week is a must, because I go on cooking burnout! Ok, here is my menu plan for this week!

Chicken Noodle Soup!

So on a cold day, what you you make?  Yep homemade chicken noodle soup!

Ingredients:
6 chicken legs
chicken boullion cube
1 onion chopped
salt and pepper to taste
parsley
chopped carrots and celery
1 bag of egg noodles

Directions:
Rinse and remove the skin on the chicken legs, put in stock pot, add boullion cube and onion and cover with water.  Bring to a boil and then let simmer for 2 1/2 - 3 hours.  Remove the chicken and place in refrigerator to cool.  Once cooled, remove chicken from bones, add to pot with salt, pepper, parsley, carrots and celery.  Cook for 30 minutes, add noodles and cook until tender!

Lasagna for the Superbowl!



What's better on a cold, snowy, Superbowl Sunday than a big old tray of lasagna and a few friends for the party! Here is my super easy lasagna recipe that is sure to be a crowd pleaser!


2 packs of no boil noodles
15 oz of ricotta
2 eggs slightly beaten
4 cups of mozzarella
2 jars of pasta sauce
1 lb of ground beef cooked and drained
1 lbs of italian sausage cooked and drained
Spread sauce on the bottom of the pan to cover. Combine, eggs, ricotta and 1 c of mozzarella.
Place noodles on top of sauce, cover with 1/3 of cheese mixture, 1/3 of ground beef, 1/3 of sausage, cover with sauce and then 1/2 c of mozzarella. Repeat 2 times. Place an additional layer of noodles on top and cover with sauce and remaining mozzarella. Cover with foil and cook for 50-55 minutes at 350. Take cover off and cook for an additional 15 minutes. Let stand 15 minutes and then cut and serve!
